Acquisition of a PEFPilotTM Dual
At the Department of Food Science at the University of Copenhagen (UCPH FOOD), we carry out research and education that help to solve the global challenges in relation to food. Our research involves the development of new foods and ways of producing them, and we combine the latest research and practice in the training of our students.
Pulsed electric field (PEF) equipment enables a wide range of food processing applications. Based on the characteristic use of high-voltage electric current applied in the micro-second range the PEF system electroporates food materials for gentle drying, extraction, and structural modification as well as microorganisms in preservation treatments. The PEF equipment will be an integral part of a next generation food processing strategy for sustainable food and ingredients in the Department of Food Science.

- absence of competition for technical reasons
Only one supplier that offers pilot scale PEF equipment allowing for both batch and continuous modes of operation
The pilot scale is here defined as up to 10 l volume in batch mode and up to 250 l/h in continuous mode which match
FOOD’s Dairy Pilot Plant scale. The PEF equipment with such flexibility in terms of process conditions and both for solid and liquid samples.
The PEF is an emerging technology for non-thermal: (i) inactivation of microorganisms and for (ii) improvement of extraction of protein and other components from foods and by products. This PEF unit, allows both processes that are very much in line with the research strategy to develop more sustainable and gentle processes.
